Description
This delicious vanilla sponge cake topped with fresh strawberries and whipped cream is perfect for any occasion.
Ingredients
- 1 cup all-purpose flour
- 1 cup granulated sugar
- 4 large eggs
- 1 teaspoon vanilla extract
- ¼ cup milk
- ½ teaspoon baking powder
- ¼ teaspoon salt
- 1 cup heavy whipping cream
- 2 tablespoons powdered sugar
- 1 teaspoon vanilla extract (for cream)
- Fresh strawberries, sliced
- Optional: Vanilla sandwich cookies for garnish
Instructions
-
Preheat and Prepare: Preheat your oven to 350°F (175°C). Grease and line an 8-inch square baking pan with parchment paper.
-
Make the Sponge Cake: In a large bowl, beat the eggs and sugar together until pale and fluffy. Add vanilla extract and mix well. Sift the flour, baking powder, and salt into the egg mixture. Fold gently to combine. Heat the milk until warm, then fold it into the batter. Pour the batter into the prepared pan, smoothing the top.
-
Bake: Bake in the preheated oven for about 25-30 minutes or until a toothpick inserted in the center comes out clean. Let the cake cool completely in the pan on a wire rack.
-
Prepare the Whipped Cream: In a mixing bowl, whip the heavy cream, powdered sugar, and vanilla extract until soft peaks form.
-
Assemble the Cake: Once the cake is cool, slice it into layers. Spread a layer of whipped cream between the layers and add sliced strawberries. Frost the top and sides with more whipped cream.
-
Garnish: Top with additional sliced strawberries. Optionally, add a vanilla sandwich cookie on each piece for decoration.
Notes
- Make sure the eggs are at room temperature to get the best volume when beating.
- Drizzle a bit of simple syrup over the cake layers to keep them moist.
- Chill the whipped cream and utensils in the fridge before whipping to achieve better peaks.
- Use the back of a spoon to create swirls in the whipped cream for a decorative finish.
