  • 1 cup heavy cream
  • 2 cups all-purpose flour
  • 1 ½ teaspoons baking powder
  • ½ teaspoon salt
  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 4 large eggs
  • 2 teaspoons vanilla extract

Instructions

  1. In a large mixing bowl, combine egg yolks and sugar. Whisk until pale and creamy.
  2. Gently fold in the mascarpone cheese until smooth.
  3. In a separate bowl, whip the heavy cream until stiff peaks form. Fold the whipped cream into the mascarpone mixture.
  4. In another clean bowl, beat egg whites until stiff peaks form. Gently fold into the mascarpone mixture. Refrigerate until needed.
  5. Preheat oven to 350°F (175°C). Grease two 9×13-inch baking pans.
  6. In a medium bowl, whisk together flour, baking powder, and salt.
  7. In a large bowl, cream the butter and sugar together until light and fluffy.
  8. Beat in eggs one at a time, then add vanilla extract.
  9. Gradually add the flour mixture to the butter mixture, mixing until just combined.
  10. Spread the batter evenly into prepared pans.
  11. Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean. Let cool completely.
  12. Combine espresso and coffee liqueur in a shallow dish.
  13. Cut each cooled cake layer in half horizontally, creating four layers.
  14. Place one cake layer on a serving platter. Brush generously with the coffee mixture.
  15. Spread a layer of mascarpone cream over the cake.
  16. Repeat with remaining layers, ending with a layer of mascarpone cream on top.
  17. Dust the top with cocoa powder.

  • Ensure the coffee mixture is cooled before brushing to prevent sogginess.
  • For a firmer tiramisu, refrigerate the assembled cake for at least 4 hours or overnight.
