- 1 cup espresso or strong coffee, cooled
- 3 tablespoons coffee liqueur (optional)
- 24 savoiardi (ladyfingers)

- 4 large eggs, separated
- 1 cup granulated sugar
- 16 oz mascarpone cheese
- 1 cup heavy cream
- 2 cups all-purpose flour
- 1 ½ teaspoons baking powder
- ½ teaspoon salt
- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 4 large eggs
- 2 teaspoons vanilla extract
Instructions
- In a large mixing bowl, combine egg yolks and sugar. Whisk until pale and creamy.
- Gently fold in the mascarpone cheese until smooth.
- In a separate bowl, whip the heavy cream until stiff peaks form. Fold the whipped cream into the mascarpone mixture.
- In another clean bowl, beat egg whites until stiff peaks form. Gently fold into the mascarpone mixture. Refrigerate until needed.
- Preheat oven to 350°F (175°C). Grease two 9×13-inch baking pans.
- In a medium bowl, whisk together flour, baking powder, and salt.
- In a large bowl, cream the butter and sugar together until light and fluffy.
- Beat in eggs one at a time, then add vanilla extract.
- Gradually add the flour mixture to the butter mixture, mixing until just combined.
- Spread the batter evenly into prepared pans.
- Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean. Let cool completely.
- Combine espresso and coffee liqueur in a shallow dish.
- Cut each cooled cake layer in half horizontally, creating four layers.
- Place one cake layer on a serving platter. Brush generously with the coffee mixture.
- Spread a layer of mascarpone cream over the cake.
- Repeat with remaining layers, ending with a layer of mascarpone cream on top.
- Dust the top with cocoa powder.
Notes
- Ensure the coffee mixture is cooled before brushing to prevent sogginess.
- For a firmer tiramisu, refrigerate the assembled cake for at least 4 hours or overnight.
- Adjust the coffee liqueur to taste or omit it for a non-alcoholic version.
- For a richer flavor, consider adding a touch of rum or brandy to the mascarpone cream.
