Instructions

  5. Add Dry Ingredients: Sift together flour, salt, and baking powder. Gradually fold into the egg mixture, being careful not to deflate the batter.
  6. Bake: Spread the batter evenly onto the prepared baking sheet. Bake for 10-12 minutes or until the cake springs back when touched.
  7. Roll the Cake: While the cake is still warm, roll it up in the parchment paper and let it cool.
  8. Whip Cream: In a chilled bowl, beat the heavy cream, powdered sugar, and vanilla extract until soft peaks form. Add pink food coloring to your desired shade.
  9. Unroll Cake: Carefully unroll the cooled cake and spread the pink whipped cream evenly over the surface.
  10. Roll and Chill: Re-roll the cake (without the parchment paper) and refrigerate for at least an hour.
  11. Optional Coating: If desired, spread a thin layer of whipped cream on the outside of the roll and sprinkle with desiccated coconut for texture.
