Instructions
- Preheat Oven: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
- Beat Egg Whites: In a large bowl, beat the egg whites until soft peaks form. Gradually add half of the sugar, continuing to beat until stiff peaks form.
- Mix Yolks and Sugar: In another bowl, beat the egg yolks with the remaining sugar and vanilla extract until thick and pale.
- Combine Mixtures: Gently fold the egg yolk mixture into the beaten egg whites.
- Add Dry Ingredients: Sift together flour, salt, and baking powder. Gradually fold into the egg mixture, being careful not to deflate the batter.
- Bake: Spread the batter evenly onto the prepared baking sheet. Bake for 10-12 minutes or until the cake springs back when touched.
- Roll the Cake: While the cake is still warm, roll it up in the parchment paper and let it cool.
- Whip Cream: In a chilled bowl, beat the heavy cream, powdered sugar, and vanilla extract until soft peaks form. Add pink food coloring to your desired shade.
- Unroll Cake: Carefully unroll the cooled cake and spread the pink whipped cream evenly over the surface.
- Roll and Chill: Re-roll the cake (without the parchment paper) and refrigerate for at least an hour.
- Optional Coating: If desired, spread a thin layer of whipped cream on the outside of the roll and sprinkle with desiccated coconut for texture.
- Slice and Serve: Slice the roll into even pieces and serve chilled.
