- 1 cup coconut milk
- 1 cup heavy cream
- 8 oz mascarpone cheese
- 1 cup shredded coconut
- 1/2 cup granulated sugar
- 1 teaspoon vanilla extract
- 24 ladyfinger biscuits
- 1/2 cup white chocolate, grated
- 4 tablespoons coconut liqueur or rum (optional)
- 1/4 cup sweetened condensed milk
- Pinch of salt
Instructions
- Prepare the Coconut Cream Mixture:
– In a large bowl, beat the mascarpone cheese until smooth.
– Add the heavy cream and continue to beat until slightly thickened.
– Mix in the coconut milk, sweetened condensed milk, sugar, vanilla extract, and a pinch of salt. Beat until the mixture is thick and creamy. - Layer the Tiramisu:
– Lightly dip each ladyfinger in the coconut liqueur or rum if using, just enough to moisten them without soaking.
– Arrange a layer of the soaked ladyfingers in the bottom of a rectangular dish.
– Spread half of the coconut cream mixture over the ladyfingers.
– Sprinkle half of the shredded coconut and half of the grated white chocolate over the cream layer. - Repeat Layers:
– Add another layer of soaked ladyfingers on top of the cream.
– Spread the remaining coconut cream mixture over this layer of ladyfingers.
– Top with the remaining shredded coconut and grated white chocolate. - Chill:
– Cover the dish with plastic wrap and refrigerate for at least 4 hours, or overnight for best results.
Notes
- For a stronger coconut flavor, toast the shredded coconut lightly before adding it to the layers.
- Ensure mascarpone and cream are not over-whipped to maintain a smooth texture.
- Adjust the sweetness according to taste by varying the amount of sugar.
- This dessert can be made a day ahead, allowing the flavors to meld beautifully.
