- 1 lb boneless skinless chicken breasts, sliced
- 2 tablespoons olive oil
- Juice of 1 lime
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 1 teaspoon paprika
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/4 teaspoon black pepper
- 1/2 teaspoon salt
- 1 tablespoon olive oil (for veggies)
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 small red onion, sliced
- Cooked white or brown rice
- Black beans (optional)
- Avocado or guacamole
- Fresh cilantro
- Lime wedges
- Dairy-free sour cream or Greek yogurt (optional)
Instructions
- Marinate the Chicken: In a mixing bowl, toss the sliced chicken breast with olive oil, lime juice, and the spice blend: cumin, chili powder, paprika, garlic powder, onion powder, salt, and black pepper. Let it marinate for at least 15–20 minutes. If you have time, marinate it longer in the fridge—up to 24 hours for deeper flavor.
- Cook the Chicken: Heat a large skillet over medium-high heat. Once hot, add the marinated chicken in a single layer. Sear for 3–5 minutes on each side, or until fully cooked and golden brown on the edges. Transfer to a plate and cover to keep warm.
- Sauté the Veggies: In the same skillet, add another tablespoon of olive oil. Toss in the sliced bell peppers and red onion. Sauté for 6–8 minutes until the veggies are soft, slightly charred, and full of flavor. Scrape up any browned bits left by the chicken for extra flavor.
- Assemble the Bowls: Start with a scoop of warm rice in each bowl. Top with the cooked chicken and sautéed peppers. Add black beans, sliced avocado, a spoonful of sour cream or yogurt, chopped cilantro, and a squeeze of lime juice. Build it your way—there’s no wrong combination.
