Description
This delicious caramel ginger loaf is a perfect blend of warm spices and sweet caramel.

- 1½ cups all-purpose flour
- 1 teaspoon baking soda
- ½ teaspoon salt
- 1 teaspoon ground ginger
- ½ teaspoon cinnamon
- ¼ teaspoon nutmeg
- ½ cup unsalted butter, softened
- ½ cup brown sugar
- 2 large eggs
- ½ cup plain yogurt
- ¼ cup molasses
- ½ cup milk
- ½ cup soft cream cheese
- ¼ cup thick caramel or dulce de leche
- 1 tbsp icing sugar
- ½ tsp vanilla
- ⅓ cup warm caramel
- Crystallized ginger
- Powdered sugar
Instructions
- Preheat oven to 350°F (175°C). Line a loaf pan.
- Whisk flour, baking soda, salt, and spices together in a bowl.
- In another bowl, beat the butter and brown sugar until fluffy.
- Add eggs one by one, mixing well after each addition.
- Mix in yogurt, molasses, and milk, then add the dry ingredients until just combined.
- Bake for 40–45 minutes. Allow to cool fully.
- Beat cream cheese until smooth, then add caramel, icing sugar, and vanilla. Chill slightly.
- Cut the loaf horizontally and spread the caramel filling inside. Close gently.
- Drizzle warm caramel over the top, add crystallized ginger pieces, and dust with powdered sugar.
