Description

This delicious caramel ginger loaf is a perfect blend of warm spices and sweet caramel.


Ingredients

  • 1½ cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 teaspoon ground ginger
  • ½ teaspoon cinnamon
  • ¼ teaspoon nutmeg
  • ½ cup unsalted butter, softened
  • ½ cup brown sugar
  • 2 large eggs
  • ½ cup plain yogurt
  • ¼ cup molasses
  • ½ cup milk
  • ½ cup soft cream cheese
  • ¼ cup thick caramel or dulce de leche
  • 1 tbsp icing sugar
  • ½ tsp vanilla
  • ⅓ cup warm caramel
  • Crystallized ginger
  • Powdered sugar

Instructions

  1. Preheat oven to 350°F (175°C). Line a loaf pan.
  2. Whisk flour, baking soda, salt, and spices together in a bowl.
  3. In another bowl, beat the butter and brown sugar until fluffy.
  4. Add eggs one by one, mixing well after each addition.
  5. Mix in yogurt, molasses, and milk, then add the dry ingredients until just combined.
  6. Bake for 40–45 minutes. Allow to cool fully.
  7. Beat cream cheese until smooth, then add caramel, icing sugar, and vanilla. Chill slightly.
  8. Cut the loaf horizontally and spread the caramel filling inside. Close gently.
  9. Drizzle warm caramel over the top, add crystallized ginger pieces, and dust with powdered sugar.
