Deliciously chewy chocolate chip bars made with brown butter and oats.
Ingredients

- ½ cup butter (salted or unsalted)
- ¾ cup brown sugar
- ¼ cup granulated sugar
- 1 large egg
- 1 egg yolk
- 1½ tsp vanilla
- 1¼ cup all-purpose flour
- ¾ cup rolled oats
- ¼ tsp baking soda
- ½ tsp salt
- ¾ cup chocolate chips or chunks (more for topping)
Instructions
- Brown the butter in a saucepan until golden and nutty. Let cool 5–10 minutes.
- Whisk the warm brown butter with both sugars until glossy.
- Add egg, yolk, and vanilla; whisk until thick and smooth.
- Stir in flour, oats, baking soda, and salt until just combined. Fold in chocolate chips.
- Press dough into a parchment-lined 8×8 pan.
- Bake at 325F for 26-29 minutes, removing when the center is just set but still soft.
- Cool completely before slicing for chewy bars.

- For best results, use a kitchen scale for measuring ingredients like flour and sugar.
- Store in an airtight container at room temperature for up to a week.
