Description

Delicious homemade raspberry chocolate truffles made with high-quality white chocolate and fresh raspberries.

Ingredients

Scale
  • 8 oz high-quality white chocolate
  • 1 cup fresh raspberries
  • 1 tbsp coconut oil
  • 2 tbsp powdered sugar
  • 1 tsp vanilla extract

Instructions

  1. Gently wash and dry raspberries, then mash lightly in a bowl.
  2. Combine mashed raspberries with powdered sugar and vanilla; set aside.
  3. Melt white chocolate and coconut oil in a microwave-safe bowl, stirring until smooth.
  4. Allow melted chocolate to cool slightly. Scoop approximately 1 tablespoon into your hand, flatten it, then place half a teaspoon of raspberry filling in the center.
  5. Fold the edges over the filling and roll into a ball. Repeat until all mixture is used.
  6. Chill formed truffles on a parchment-lined baking sheet for about 30 minutes.

Notes

  • Ensure the chocolate does not get too hot before adding the filling to maintain the truffle shape.
  • These truffles are best served chilled.
