Delicious homemade raspberry chocolate truffles made with high-quality white chocolate and fresh raspberries.

- 8 oz high-quality white chocolate
- 1 cup fresh raspberries
- 1 tbsp coconut oil
- 2 tbsp powdered sugar
- 1 tsp vanilla extract
Instructions
- Gently wash and dry raspberries, then mash lightly in a bowl.
- Combine mashed raspberries with powdered sugar and vanilla; set aside.
- Melt white chocolate and coconut oil in a microwave-safe bowl, stirring until smooth.
- Allow melted chocolate to cool slightly. Scoop approximately 1 tablespoon into your hand, flatten it, then place half a teaspoon of raspberry filling in the center.
- Fold the edges over the filling and roll into a ball. Repeat until all mixture is used.
- Chill formed truffles on a parchment-lined baking sheet for about 30 minutes.
Notes
- Ensure the chocolate does not get too hot before adding the filling to maintain the truffle shape.
- These truffles are best served chilled.
