Description

Delicious and creamy white chocolate lemon truffles, perfect for any occasion.

Ingredients

Scale
  • 1 cup white chocolate chips (or chopped white chocolate)
  • 1/4 cup heavy cream
  • 1 tablespoon unsalted butter
  • 1 tablespoon lemon zest
  • 1 tablespoon lemon juice
  • 1/2 teaspoon vanilla extract
  • Pinch of salt
  • Additional white chocolate (for coating)
  • Crushed shortbread cookies or additional lemon zest (for garnish)

Instructions

  1. Melt the Chocolate: In a microwave-safe bowl, combine the white chocolate chips, heavy cream, and butter. Microwave in 20-second intervals, stirring in between, until the mixture is smooth and fully melted.
  2. Flavor Infusion: Stir in the lemon zest, lemon juice, vanilla extract, and a pinch of salt into the melted chocolate mixture. Mix well until all ingredients are thoroughly combined.
  3. Chill the Mixture: Cover the mixture with plastic wrap and refrigerate for about 1-2 hours, or until it is firm enough to handle.
  4. Shape the Truffles: Once the mixture is firm, use a teaspoon to scoop out small portions and roll them into balls with your hands. Place the formed truffles on a baking sheet lined with parchment paper.
  5. Coat the Truffles: Melt additional white chocolate in a microwave-safe bowl. Dip each truffle into the melted white chocolate, ensuring an even coat. Return the truffles to the parchment paper.
  6. Garnish and Set: While the chocolate coating is still wet, sprinkle crushed shortbread cookies or additional lemon zest on top for garnish. Allow the truffles to set at room temperature or refrigerate them to speed up the process.

Notes

  • Ensure the truffle mixture is firm enough before rolling; if too soft, refrigerate for a bit longer.
  • For a more intense lemon flavor, you can adjust the lemon zest and juice to taste.
  • Use gloves when rolling the truffles to prevent the mixture from melting from the heat of your hands.
  • You can also drizzle additional white or dark chocolate over the truffles for decoration.
