Description

Delicious and creamy White Chocolate Cheesecake Truffles that are easy to make and perfect for any occasion.

Ingredients

Scale
  • 1 cup cream cheese, softened
  • 1 cup crushed graham crackers
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 8 ounces white chocolate, chopped
  • 1/4 cup brown sugar (for coating)
  • 1 pinch salt (optional)

Instructions

  1. Prepare the Filling: In a mixing bowl, combine softened cream cheese and powdered sugar. Beat until smooth and creamy. Stir in the vanilla extract and a pinch of salt if using. Fold in the crushed graham crackers until well combined. The mixture should be thick enough to form balls.
  2. Shaping the Truffles: Scoop portions of the mixture using a teaspoon or small cookie scoop and roll them into balls about 1 inch in diameter. Place the balls on a baking sheet lined with parchment paper. Freeze for about 30 minutes, or until firm.
  3. Coating the Truffles: Melt the white chocolate in a heatproof bowl over simmering water (double boiler), stirring until smooth. Alternatively, melt in the microwave in 20-second intervals, stirring between each, until fully melted. Dip each chilled truffle into the melted white chocolate, ensuring it is completely coated. Use a fork to lift out and allow excess chocolate to drip off. Place back on the parchment-lined sheet.
  4. Final Touches: While the chocolate is still wet, sprinkle the tops of the truffles with brown sugar for added texture and flavor. Refrigerate the truffles until the chocolate is set.

Notes

  • Ensure the cream cheese is fully softened for a smooth mixture.
  • Use high-quality white chocolate for the best flavor and consistency.
  • These truffles can be stored in an airtight container in the refrigerator for up to a week.
  • For variations, consider adding a splash of almond extract or lemon zest for different flavor profiles.
  • If the truffles are too soft to roll, chill the mixture slightly before forming shapes.
