Description

A hearty and flavorful soup with Italian sausage, cheese tortellini, and fresh vegetables.


Ingredients

  • 1 lb Italian sausage (sweet or spicy)
  • 2 cups fresh or frozen cheese tortellini
  • 4 cups vegetable broth
  • 2 medium carrots, sliced thinly
  • 2 stalks celery, chopped
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 2 cups fresh spinach or kale
  • 1 tsp dried thyme (or 1 tbsp fresh)
  • 1 tsp dried oregano (or 1 tbsp fresh)
  • ½ cup grated Parmesan cheese

Instructions

  1. In a large pot over medium heat, brown the Italian sausage until crispy.
  2. Add diced onion, sliced carrots, and chopped celery; sauté for about 5 minutes until softened.
  3. Stir in minced garlic and herbs; cook for an additional minute until fragrant.
  4. Pour in the vegetable broth and add spinach or kale. Bring to a simmer.
  5. Add tortellini and cook according to package instructions until they float.
  6. Before serving, stir in grated Parmesan cheese until melted.

Notes

  • For a richer flavor, you can use chicken broth instead of vegetable broth.
  • This soup can be made in advance and stored in the refrigerator for up to 3 days.
