Ingredients

- 2 cups all-purpose flour
- 1 teaspoon baking soda
- ¼ teaspoon salt
- ½ teaspoon ground cinnamon
- ½ teaspoon ground cardamom
- 3 medium ripe bananas (about 8 ounces each, mashed to yield 1 cup)
- 2 large eggs (room temperature)
- ½ cup extra-virgin olive oil
- ½ cup granulated sugar
- ½ cup tahini (well-stirred)
- 1 teaspoon pure vanilla extract
- 1 tablespoon sesame seeds (optional, for topping)
Instructions
- Preheat the oven to 350°F (180°C). Grease and line an 8 x 4 inch (21 x 11 cm) loaf pan with parchment paper.
- Whisk together the flour, baking soda, salt, cinnamon, and cardamom in a medium bowl.
- Mash the bananas in a large bowl until mostly smooth.
- Whisk in the eggs and granulated sugar until fully combined.
- Stir in the olive oil, tahini, and pure vanilla extract until smooth.
- Add the dry ingredients to the wet ingredients.
- Fold just until no dry flour remains.
- Pour the batter into the prepared pan and smooth the top.
- Sprinkle the sesame seeds evenly over the surface.
- Bake for 55 to 60 minutes, or until a toothpick inserted in the center comes out clean.
- Cool in the pan for 10 minutes, then transfer to a wire rack and cool completely before slicing.
