Description

Ingredients

  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • ¼ cup granulated sugar
  • 16 oz cream cheese, softened
  • ½ cup granulated sugar
  • 1 tsp vanilla extract
  • 2 large eggs
  • 2 cups fresh strawberries, hulled and diced
  • ¼ cup granulated sugar
  • 2 tbsp cornstarch
  • 1 tbsp lemon juice
  • ½ cup all-purpose flour
  • ¼ cup granulated sugar
  • ¼ cup unsalted butter, melted
  • ¼ cup oats (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and line an 8×8 inch baking pan with parchment paper.
  2. In a bowl, combine graham cracker crumbs, melted butter, and sugar. Press the mixture evenly into the bottom of the prepared pan. Bake for 10 minutes and let it cool.
  3. Beat the softened cream cheese with sugar until smooth. Add vanilla extract and eggs, one at a time, mixing until well combined. Pour the cheesecake mixture over the cooled crust.
  4. In a saucepan, combine strawberries, sugar, cornstarch, and lemon juice. Cook over medium heat until the mixture thickens. Allow to cool slightly, then spread evenly over the cheesecake layer.
  5. In a bowl, mix flour, sugar, melted butter, and oats until crumbly. Sprinkle the crumble mixture over the strawberry layer.
  6. Bake the assembled bars in the preheated oven for 25-30 minutes or until the top is golden and the center is set. Let the bars cool to room temperature, then chill in the refrigerator for at least 2 hours.
  7. Once chilled, cut into bars and serve.

  • Ensure the cream cheese is well softened to avoid lumps in the cheesecake layer.
  • For a tangy twist, add a bit of lemon zest to the cheesecake mixture.
