- 1 ½ cups graham cracker crumbs
- ½ cup unsalted butter, melted
- ¼ cup granulated sugar
- 16 oz cream cheese, softened
- ½ cup granulated sugar
- 1 tsp vanilla extract
- 2 large eggs
- 2 cups fresh strawberries, hulled and diced
- ¼ cup granulated sugar
- 2 tbsp cornstarch
- 1 tbsp lemon juice
- ½ cup all-purpose flour
- ¼ cup granulated sugar
- ¼ cup unsalted butter, melted
- ¼ cup oats (optional)
Instructions
- Preheat the oven to 350°F (175°C) and line an 8×8 inch baking pan with parchment paper.
- In a bowl, combine graham cracker crumbs, melted butter, and sugar. Press the mixture evenly into the bottom of the prepared pan. Bake for 10 minutes and let it cool.
- Beat the softened cream cheese with sugar until smooth. Add vanilla extract and eggs, one at a time, mixing until well combined. Pour the cheesecake mixture over the cooled crust.
- In a saucepan, combine strawberries, sugar, cornstarch, and lemon juice. Cook over medium heat until the mixture thickens. Allow to cool slightly, then spread evenly over the cheesecake layer.
- In a bowl, mix flour, sugar, melted butter, and oats until crumbly. Sprinkle the crumble mixture over the strawberry layer.
- Bake the assembled bars in the preheated oven for 25-30 minutes or until the top is golden and the center is set. Let the bars cool to room temperature, then chill in the refrigerator for at least 2 hours.
- Once chilled, cut into bars and serve.
Notes
- Ensure the cream cheese is well softened to avoid lumps in the cheesecake layer.
- For a tangy twist, add a bit of lemon zest to the cheesecake mixture.
- Fresh strawberries work best, but frozen ones can be used if drained well.
- Adjust the sweetness to taste, especially in the strawberry layer.
