Description

A delightful soft pink vanilla cake with whipped cream frosting, perfect for any celebration.

Ingredients

Scale
  • 2 ½ cups cake flour
  • 2 cups granulated sugar
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • ¾ cup unsalted butter, softened
  • 4 large egg whites
  • 1 ½ cups whole milk
  • 2 teaspoons vanilla extract
  • a few drops pink food coloring
  • 1 ½ cups heavy cream
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • optional decorative sprinkles for garnish

Instructions

  1. Preheat the Oven
    – Preheat your oven to 350°F (175°C). Grease and flour two round 9-inch cake pans.
  2. Prepare the Cake Batter
    – In a large mixing bowl, combine cake flour, granulated sugar, baking powder, and salt. Mix well.
    – Add softened butter and mix until the mixture resembles coarse crumbs.
    – In another bowl, whisk egg whites, whole milk, and vanilla extract together.
    – Gradually add the milk mixture to the dry ingredients, mixing until well combined.
    – Divide the batter into two equal parts. Add a few drops of pink food coloring to one part and mix well to achieve the desired pink color.
  3. Bake
    – Pour the batter into the prepared cake pans, one vanilla and one pink.
    – Bake in the preheated oven for 25-30 minutes or until a toothpick inserted into the center comes out clean.
    – Allow the cakes to cool in the pans for about 10 minutes, then transfer to a wire rack to cool completely.
  4. Prepare the Whipped Cream Frosting
    – In a chilled mixing bowl, whip the heavy cream until soft peaks form.
    – Add the powdered sugar and vanilla extract. Continue to whip until stiff peaks form.
  5. Assemble the Cake
    – Place the pink cake layer on a serving plate. Spread a layer of whipped cream frosting on top.
    – Place the vanilla cake layer on top of the frosted pink cake. Spread more frosting on top and on the sides of the cake.
    – Decorate with decorative sprinkles if desired.

Notes

  • Ensure that the butter is well softened for a smoother batter.
  • Room temperature egg whites will whip better.
  • Adjust the pink color according to your preference by varying the amount of food coloring.
  • Keep the cake chilled if not serving immediately to keep the frosting firm.
  • Get creative with different types of sprinkles or edible pearls for a more festive look.
