This delicious Apple Cider Chicken is flavored with apples and a rich cider sauce, perfect for a comforting meal.

- 4 boneless, skinless chicken breasts (approx. 600g / 1 lbs)
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons olive oil
- 1 large apple, peeled and sliced (approx. 200g)
- 1/2 cup chicken broth
- 1/2 cup apple cider
- 2 tablespoons maple syrup
- 1 tablespoon apple cider vinegar
- 1 teaspoon Dijon mustard
- 1/4 teaspoon ground cinnamon
- 1 tablespoon cornstarch mixed with 2 tablespoons water
- 2 tablespoons chopped fresh parsley, for garnish
Instructions
- Season the chicken breasts with salt and pepper.
- Heat the olive oil in a large skillet over medium-high heat. Add the chicken breasts and cook for 5-7 minutes per side, or until golden brown and cooked through. Remove the chicken from the skillet and set aside.
- Add the sliced apple to the skillet and cook for 3-4 minutes, or until softened.
- Pour in the chicken broth, apple cider, maple syrup, apple cider vinegar, Dijon mustard, and cinnamon. Bring to a simmer, scraping up any browned bits from the bottom of the skillet.
- Stir in the cornstarch mixture and cook for 1-2 minutes, or until the sauce has thickened.
- Return the chicken breasts to the skillet and spoon the apple cider sauce over the top. Reduce heat to low, cover, and simmer for 5-10 minutes, or until the chicken is heated through.
- Garnish with fresh parsley and serve immediately.
