Description

A delicious recipe for seared scallops served in a creamy sauce.

Ingredients

Scale
  • 1 pound sea scallops
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 2 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/4 cup grated Parmesan cheese
  • 1 tablespoon lemon juice
  • 1 tablespoon chopped fresh parsley (for garnish)

Instructions

  1. Prepare the Scallops: Pat the scallops dry with paper towels. Season both sides with salt and pepper.
  2. Sear the Scallops: In a large skillet, heat olive oil over medium-high heat. Add scallops in a single layer, making sure not to overcrowd the pan. Sear for 2-3 minutes on each side until a golden crust forms. Remove scallops from the pan and set aside.
  3. Make the Cream Sauce: In the same pan, lower the heat to medium and add butter. Once melted, add minced garlic and sauté for about a minute until fragrant. Pour in heavy cream and chicken broth, stirring to combine. Let the mixture simmer for 3-4 minutes.
  4. Finish the Sauce: Add Parmesan cheese and lemon juice to the pan. Stir until the cheese melts and the sauce thickens slightly. Return the scallops to the skillet and spoon sauce over them. Simmer for another 2 minutes to ensure they are heated through.
  5. Serve: Transfer scallops to a serving platter, pouring sauce over them. Garnish with chopped parsley.

Notes

  • Ensure the scallops are completely dry to achieve a perfect sear.
  • Avoid overcrowding the skillet to allow even browning.
  • For additional flavor, consider adding a splash of white wine to the cream sauce.
  • Adjust the consistency of the sauce by adding more cream or broth if necessary.
