Ingredients

- 2 cups carrots (sliced)
- 2 cups parsnips (sliced)
- 2 cups Yukon gold potatoes (cubed)
- 1 cup red onion (wedges)
- 3 tbsp olive oil
- 2 tsp fresh thyme
- 2 tsp fresh rosemary
- Salt and pepper to taste
Instructions
- Preheat oven to 425°F (220°C).
- Wash, peel, and chop the vegetables into uniform pieces.
- In a large bowl, toss the veggies with olive oil, thyme, rosemary, salt, and pepper until evenly coated.
- Spread the seasoned vegetables on a baking sheet in a single layer.
- Roast for 30-35 minutes, stirring halfway through for even browning.
- Serve hot and enjoy!
