Description

Ingredients

  • 2 cups parsnips (sliced)
  • 2 cups Yukon gold potatoes (cubed)
  • 1 cup red onion (wedges)
  • 3 tbsp olive oil

  • Salt and pepper to taste

Instructions

  1. Preheat oven to 425°F (220°C).
