- 2 tablespoons butter
- 1/2 cup all-purpose flour
- 1 egg
- 1 egg yolk

- 1/4 cup finely chopped fresh herbs (parsley, thyme, chives)
- 1/3 cup grated cheese (Gruyère or Parmesan)

Instructions
- Preheat Oven:
Preheat your oven to 400°F (200°C). Grease a canelé mold or a small muffin tin. - Prepare Batter:
In a small saucepan, heat the milk and butter until the butter melts. Remove from heat. In a bowl, whisk together the flour, salt, and black pepper. Add the egg and egg yolk to the flour mixture, and whisk until smooth. Slowly pour in the milk mixture, whisking constantly to avoid lumps. The batter should be smooth and slightly thick. - Add Fillings:
Mix in the chopped sausage or mushrooms, fresh herbs, and grated cheese into the batter. - Fill Molds:
Pour the mixture into the prepared canelé molds, filling them about 3/4 of the way. - Bake:
Bake in the preheated oven for about 25-30 minutes, or until golden brown and puffed. - Cool and Garnish:
Allow the canelés to cool slightly before removing them from the molds. Garnish with additional fresh herbs before serving.
