Description

This delicious chicken and biscuit casserole is a comforting meal perfect for family dinners.


Ingredients

  • 2 cups cooked chicken, shredded
  • 1 cup carrots, sliced
  • 1 cup celery, chopped
  • 1 cup frozen peas
  • 1 cup frozen corn
  • 1 small onion, diced
  • 4 tbsp butter
  • 1/3 cup all-purpose flour
  • 2 cups chicken broth
  • 1 cup milk
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 can refrigerated biscuit dough

Instructions

  1. Preheat oven to 375°F and lightly grease a baking dish.
  2. Melt butter in a skillet over medium heat and cook onion, carrots, and celery for 5 minutes.
  3. Stir in flour and cook for 1 minute.
  4. Slowly add chicken broth and milk, stirring until thick and smooth.
  5. Add cooked chicken, peas, and corn, then season with salt and pepper.
  6. Transfer mixture to baking dish and spread evenly.
  7. Place biscuit dough pieces on top of the filling.
  8. Bake for 30 to 35 minutes until biscuits are golden and filling is bubbly.

Notes

  • For a creamier filling, add an extra 1/4 cup of milk.
  • You can swap in any of your favorite vegetables.
