This delicious chicken and biscuit casserole is a comforting meal perfect for family dinners.
Ingredients

- 2 cups cooked chicken, shredded
- 1 cup carrots, sliced
- 1 cup celery, chopped
- 1 cup frozen peas
- 1 cup frozen corn
- 1 small onion, diced
- 4 tbsp butter
- 1/3 cup all-purpose flour
- 2 cups chicken broth
- 1 cup milk
- 1 tsp salt
- 1/2 tsp black pepper
- 1 can refrigerated biscuit dough
Instructions
- Preheat oven to 375°F and lightly grease a baking dish.
- Melt butter in a skillet over medium heat and cook onion, carrots, and celery for 5 minutes.
- Stir in flour and cook for 1 minute.
- Slowly add chicken broth and milk, stirring until thick and smooth.
- Add cooked chicken, peas, and corn, then season with salt and pepper.
- Transfer mixture to baking dish and spread evenly.
- Place biscuit dough pieces on top of the filling.
- Bake for 30 to 35 minutes until biscuits are golden and filling is bubbly.
Notes
- For a creamier filling, add an extra 1/4 cup of milk.
- You can swap in any of your favorite vegetables.
