- 3 cloves garlic (fresh minced)
- 1 tablespoon ginger (fresh grated)
- 3 tablespoons soy sauce (low-sodium can be used for less salt)
- 2 tablespoons brown sugar (balances the savory notes)
- 2 stalks green onions (chopped)
- 1 cup carrots (shredded or julienned)
- 1 cup bell peppers (any color)
- 2 cups cooked rice or quinoa (use brown rice for added fiber)
- 1 tablespoon sesame seeds (for garnish)
Instructions
- In a large skillet, brown 1 pound of ground beef over medium heat for about 5-7 minutes until fully cooked and nicely browned.
- Add 3 minced garlic cloves and 1 tablespoon of grated ginger. Sauté for another 2 minutes.
- In a bowl, whisk together soy sauce, brown sugar, sesame oil, and a splash of rice vinegar. Pour this mixture over the beef, stirring well to combine.
- Let the mixture simmer on low heat for about 5 minutes.
- Chop green onions and slice cucumbers for a fresh crunch.
- Spoon the beef over a bed of steamed rice or quinoa in bowls. Top with fresh veggies and a sprinkle of sesame seeds.
