Description

Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 head of fresh garlic
  • 4 tbsp unsalted butter, softened
  • 2 tbsp freshly squeezed lemon juice
  • 3 tbsp extra virgin olive oil
  • 1/4 cup fresh parsley, chopped
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Slice the top off the garlic head, drizzle with olive oil, wrap in foil, and roast alongside the chicken.
  3. Season chicken breasts generously with salt and pepper.
  4. In a bowl, mix softened butter, minced roasted garlic (squeezed from skins), lemon juice, and parsley until smooth.
  5. Place seasoned chicken in a baking dish and coat with the garlic butter mixture.
  6. Roast in the oven for 25-30 minutes until golden brown and cooked through.
  7. Drizzle with additional lemon olive dressing before serving.
