- 4 boneless, skinless chicken breasts
- 1 head of fresh garlic
- 4 tbsp unsalted butter, softened
- 2 tbsp freshly squeezed lemon juice
- 3 tbsp extra virgin olive oil
- 1/4 cup fresh parsley, chopped
- Salt and pepper to taste
Instructions
- Preheat oven to 400°F (200°C).
- Slice the top off the garlic head, drizzle with olive oil, wrap in foil, and roast alongside the chicken.
- Season chicken breasts generously with salt and pepper.
- In a bowl, mix softened butter, minced roasted garlic (squeezed from skins), lemon juice, and parsley until smooth.
- Place seasoned chicken in a baking dish and coat with the garlic butter mixture.
- Roast in the oven for 25-30 minutes until golden brown and cooked through.
- Drizzle with additional lemon olive dressing before serving.
Notes
- Make sure to let the chicken rest for a few minutes before slicing for better juiciness.
