- 3 lbs chuck roast
- 2 cups low-sodium beef broth
- 4 large carrots, cut into thick chunks
- 2 large yellow onions, quartered
- 4 cloves garlic, minced
- 4 medium Yukon gold potatoes, halved
- 1 tsp salt
- 1 tsp black pepper
- 2 tsp dried thyme (or fresh)
- 2 tsp dried rosemary (or fresh)
Instructions
- Gather all ingredients, cutting the chuck roast into chunks for easier placement in the crockpot.
- Season the chuck roast generously with salt and pepper, rubbing spices in well.
- (Optional) Sear the seasoned roast in a hot skillet for about five minutes on each side until browned.
- Place quartered onions at the bottom of the crockpot, followed by carrots and potatoes. Place the roast on top of the vegetables.
- Pour beef broth over the roast until it’s mostly covered. Sprinkle thyme and rosemary evenly over everything.
- Cover and cook on low for 8 hours or high for 4 hours until meat is tender.
Notes
- For added flavor, consider marinating the chuck roast overnight.
