Ingredients

  • 3 lbs chuck roast
  • 2 cups low-sodium beef broth
  • 4 large carrots, cut into thick chunks
  • 2 large yellow onions, quartered
  • 4 cloves garlic, minced
  • 4 medium Yukon gold potatoes, halved
  • 1 tsp salt
  • 1 tsp black pepper
  • 2 tsp dried thyme (or fresh)
  • 2 tsp dried rosemary (or fresh)

Instructions

  1. Gather all ingredients, cutting the chuck roast into chunks for easier placement in the crockpot.
  2. Season the chuck roast generously with salt and pepper, rubbing spices in well.
  3. (Optional) Sear the seasoned roast in a hot skillet for about five minutes on each side until browned.
  4. Place quartered onions at the bottom of the crockpot, followed by carrots and potatoes. Place the roast on top of the vegetables.
  5. Pour beef broth over the roast until it’s mostly covered. Sprinkle thyme and rosemary evenly over everything.
  6. Cover and cook on low for 8 hours or high for 4 hours until meat is tender.
