Description

Ingredients

  • 9 oz fresh cheese ravioli
  • 2 tbsp extra virgin olive oil
  • 3 cloves garlic, minced
  • 1 cup cherry tomatoes, halved
  • 2 cups fresh spinach
  • 1 cup heavy cream
  • ½ cup grated Parmesan cheese
  • ¼ cup fresh basil leaves, chopped
  • Salt and pepper to taste

Instructions

  1. Prepare all ingredients by chopping garlic and halving cherry tomatoes.
  2. In a large skillet over medium heat, add olive oil. Sauté minced garlic until fragrant, then add cherry tomatoes and cook until they soften.
  3. Add fresh spinach to the skillet and stir until wilted (about 2 minutes).
  4. Pour in heavy cream, stirring continuously until combined. Allow it to simmer and thicken slightly.
  5. In another pot, boil salted water and cook ravioli according to package instructions (usually about 3-5 minutes).
  6. Drain the ravioli and gently toss them in the skillet with the cream sauce until evenly coated.
  7. Serve hot, topped with grated Parmesan cheese and chopped basil.
