Description

A delicious creamy garlic chicken dish with fresh spinach and Parmesan cheese, perfect for a quick dinner.


Ingredients

  • 4 boneless, skinless chicken breasts (about 1 lbs)
  • 4 cups fresh spinach
  • 1 cup heavy cream
  • 3 cloves garlic (minced)
  • ½ cup grated Parmesan cheese
  • 1 cup low-sodium chicken broth
  • 2 tsp Italian seasoning
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Season chicken breasts with salt and pepper. Heat olive oil in a large skillet over medium-high heat. Cook chicken for 5-7 minutes on each side until golden brown; remove from skillet.
  2. In the same skillet, sauté minced garlic for about 1 minute until fragrant.
  3. Add chicken broth, scraping any browned bits from the pan. Stir in heavy cream and Italian seasoning; let simmer for about 3 minutes until slightly thickened.
  4. Stir in fresh spinach and Parmesan cheese until spinach wilts and cheese melts into the sauce.
  5. Return the chicken to the skillet, spooning sauce over it, and cook for another 5 minutes until heated through.
  6. Serve immediately, drizzled with extra sauce if desired.

Notes

  • This recipe works well with other vegetables, such as mushrooms or sun-dried tomatoes.
  • For a lighter version, you can use low-fat cream.
