A delicious creamy garlic chicken dish with fresh spinach and Parmesan cheese, perfect for a quick dinner.

- 4 boneless, skinless chicken breasts (about 1 lbs)
- 4 cups fresh spinach
- 1 cup heavy cream
- 3 cloves garlic (minced)
- ½ cup grated Parmesan cheese
- 1 cup low-sodium chicken broth
- 2 tsp Italian seasoning
- Salt and pepper to taste
- 2 tbsp olive oil
Instructions
- Season chicken breasts with salt and pepper. Heat olive oil in a large skillet over medium-high heat. Cook chicken for 5-7 minutes on each side until golden brown; remove from skillet.
- In the same skillet, sauté minced garlic for about 1 minute until fragrant.
- Add chicken broth, scraping any browned bits from the pan. Stir in heavy cream and Italian seasoning; let simmer for about 3 minutes until slightly thickened.
- Stir in fresh spinach and Parmesan cheese until spinach wilts and cheese melts into the sauce.
- Return the chicken to the skillet, spooning sauce over it, and cook for another 5 minutes until heated through.
- Serve immediately, drizzled with extra sauce if desired.
Notes
- This recipe works well with other vegetables, such as mushrooms or sun-dried tomatoes.
- For a lighter version, you can use low-fat cream.
