  • 3 oz instant vanilla pudding mix

Instructions

  1. Preheat your oven to 350°F (175°C) and line cupcake pans with liners.
  2. In a bowl, mix flour, sugar, baking powder, and salt.
  3. Cream the butter until fluffy, then add sugar gradually until combined.
  4. Beat in eggs one at a time, followed by mashed bananas and vanilla.
  5. Fold dry ingredients into wet ingredients gently to combine.
  6. Fill liners two-thirds full with batter and bake for 18-20 minutes until golden and a toothpick comes out clean.
  7. Cool before frosting.
