- 1 cup all-purpose flour
- 1 cup granulated sugar
- 1 tsp baking powder
- 1/4 tsp salt
- 1/2 cup unsalted butter, softened
- 2 large eggs
- 1 ripe banana, mashed (about 1/2 cup)
- 1 tsp vanilla extract
- 1/2 cup whole milk
- 3 oz instant vanilla pudding mix
- Whipped cream topping
Instructions
- Preheat your oven to 350°F (175°C) and line cupcake pans with liners.
- In a bowl, mix flour, sugar, baking powder, and salt.
- Cream the butter until fluffy, then add sugar gradually until combined.
- Beat in eggs one at a time, followed by mashed bananas and vanilla.
- Fold dry ingredients into wet ingredients gently to combine.
- Fill liners two-thirds full with batter and bake for 18-20 minutes until golden and a toothpick comes out clean.
- Cool before frosting.
Notes
- For best results, allow the butter to soften at room temperature before creaming.
- Make sure not to overmix once you combine the wet and dry ingredients.
