Ingredients
Scale
- 2 pounds baby potatoes (Yukon Gold or red)
- 6 cloves garlic, minced
- 2 tablespoons olive oil
- 1 tablespoon fresh rosemary, chopped
- 1 tablespoon fresh thyme, chopped
- Salt and pepper to taste
- Optional: Fresh parsley for garnish
Instructions
- Preheat the Oven: Preheat your oven to 400°F (200°C).
- Prepare the Potatoes: Wash and dry the potatoes thoroughly. Cut them into bite-sized pieces.
- Mix Ingredients: In a large bowl, combine the minced garlic, olive oil, rosemary, thyme, salt, and pepper. Add the potatoes and toss until they are evenly coated.
- Roast the Potatoes: Spread the potatoes on a baking sheet in a single layer. Make sure they are not crowded, so they can roast evenly.
- Bake: Roast the potatoes in the preheated oven for 35-45 minutes, or until they are golden brown and crispy. Stir occasionally to ensure even cooking.
- Garnish and Serve: Remove from the oven, garnish with fresh parsley if desired, and serve hot.
Notes
- Uniform Size: Ensure the potato pieces are uniform in size for even cooking.
- Crispy Texture: For extra crispiness, turn the potatoes halfway through the roasting process.
- Flavor Variations: Experiment with different herbs such as oregano or basil for a unique flavor twist.
