Ingredients
- 1 pound salmon fillet, skin removed
- 2 tablespoons olive oil
- Salt and pepper to taste
- 1 tablespoon lemon juice
- 1 clove garlic, minced
- 1 teaspoon ground paprika
- 1 teaspoon dried dill
- 1/2 cup Greek yogurt
- 2 tablespoons fresh lemon juice
- 1/4 cup fresh parsley, chopped
- 1/4 cup fresh cilantro, chopped
- 1 tablespoon fresh dill, chopped
- Salt and pepper to taste

Prepare the Marinade:
In a small bowl, mix olive oil, lemon juice, minced garlic, paprika, dried dill, salt, and pepper. -
Prepare the Salmon:
Cut the salmon fillet into bite-sized cubes. Place salmon cubes in a shallow dish and pour the marinade over them. Ensure each cube is evenly coated. Cover and refrigerate for at least 30 minutes. -
Make the Herb Sauce:
In a blender or food processor, combine Greek yogurt, lemon juice, parsley, cilantro, dill, salt, and pepper. Blend until smooth. -
Grill the Salmon:
Preheat the grill to medium-high heat. Thread the marinated salmon onto skewers (if using). Grill salmon bites for 3-4 minutes on each side, or until they are cooked through and have a nice char. -
Serve:
Arrange grilled salmon bites on a serving platter. Drizzle the herb sauce over the salmon bites or serve it on the side for dipping.
Notes
- If using wooden skewers, soak them in water for at least 30 minutes before grilling to prevent burning.
- For added flavor, you can sprinkle fresh lemon zest over the salmon before serving.
- Adjust the consistency of the herb sauce with more lemon juice or a splash of water if needed.
- Ensure the grill is hot before placing the salmon to get good grill marks and prevent sticking.
