Refreshing peach lemonade ice pops perfect for summer!


Ingredients

  • 46 large fresh peaches
  • 2 cups frozen peaches
  • 1 can canned peaches
  • 46 large fresh lemons (about 1/2 cup of juice)
  • 1 tablespoon lemon zest (Optional)
  • 1 cup granulated sugar
  • 1/4 cup honey or maple syrup
  • 1/4 cup stevia or erythritol
  • 1 cup filtered water
  • 1/4 cup fresh mint (Optional)
  • 1/4 teaspoon vanilla extract

Instructions

  1. Prepare the Peaches: If using fresh peaches, wash them thoroughly, peel if desired, cut in half, remove the pit, and chop into smaller chunks. If using frozen peaches, allow them to thaw slightly at room temperature for about 15-20 minutes or microwave for a minute or two until slightly softened.
  2. Make the Peach Puree: Place chopped fresh or slightly thawed frozen peaches into a blender. Add about 1/4 cup of water or a tablespoon or two of lemon juice to help with blending. Blend until smooth, or leave some small pieces for a chunkier texture. Taste the puree and set aside.
  3. Prepare the Lemonade Base: In a medium bowl or pitcher, squeeze fresh lemons to extract juice, straining out any seeds. Add granulated sugar (or chosen sweetener) to the lemon juice and pour in about 1 cup of filtered water. Stir well until the sugar is completely dissolved, adjusting sweetness or tartness as desired.
  4. Combine and Taste: Pour the peach puree into the lemonade base and stir thoroughly until evenly distributed. Taste the mixture and adjust thickness or flavor as needed.
  5. Fill the Ice Pop Molds: Carefully pour the peach lemonade mixture into ice pop molds, leaving a small gap at the top for expansion. For a layered effect, freeze plain lemonade first, then add peach puree and top with more lemonade.
  6. Insert Sticks and Freeze: Insert ice pop sticks into the molds and secure lids if available. Freeze for at least 4-6 hours or overnight until completely solid.
  7. Unmold and Enjoy: Once frozen, remove ice pops from the freezer and run the molds under warm water for about 15-20 seconds to loosen. Gently pull the stick to release the ice pop and enjoy immediately!

Notes
