- 4 chicken breasts
- 2 tbsp olive oil
- 2 tbsp butter
- 8 oz mushrooms sliced
- 3 cloves garlic minced
- 1 cup chicken broth
- 1 cup heavy cream
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp fresh thyme
Instructions
- Season chicken breasts with salt and pepper on both sides.
- Heat olive oil in a large skillet over medium heat and sear chicken for 4 to 5 minutes per side then remove.
- Add butter to the same skillet and cook mushrooms for 5 minutes until golden.
- Stir in garlic and cook for 30 seconds until fragrant.
- Pour in chicken broth and simmer for 3 minutes scraping the pan.
- Add heavy cream and simmer for 5 minutes until slightly thick.
- Return chicken to the skillet and simmer 8 minutes until cooked through.
- Sprinkle fresh thyme on top and serve warm.
Notes
- This dish pairs well with rice or pasta to soak up the creamy sauce.
