  • 250g (8.8 oz) pasta (e.g., penne or fettuccine)
  • 2 tablespoons olive oil
  • 1 cup heavy cream
  • 4 cloves garlic, minced
  • 1 cup chicken broth
  • 1 cup grated Parmesan cheese

  • 1 tablespoon unsalted butter
  • 1 tablespoon fresh parsley, chopped (for garnish)
  • 1 teaspoon Italian seasoning
  • optional Red pepper flakes for heat

Instructions

  1. Prepare the Chicken: Cut the chicken breasts into bite-sized pieces. Season with salt, pepper, and Italian seasoning.
  2. Cook the Pasta: Bring a large pot of salted water to a boil. Cook the pasta according to package instructions until al dente. Drain and set aside, saving a bit of pasta water.
  3. Sauté the Chicken: In a large skillet, heat olive oil over medium-high heat. Add the chicken pieces and sauté until golden brown and cooked through. Remove and set aside.
  4. Make the Sauce: In the same skillet, reduce the heat to medium and add butter. Once melted, add minced garlic and sauté for about 1 minute until fragrant. Pour in chicken broth and let it simmer for 2-3 minutes. Reduce heat to low, add heavy cream, and stir well. Gradually mix in Parmesan cheese until smooth.
  5. Combine: Add the cooked pasta and chicken to the sauce. Toss everything together until the pasta is well coated. If needed, add some reserved pasta water for consistency.
  6. Serve: Plate the pasta and garnish with freshly chopped parsley. Add red pepper flakes if you desire some heat.
