Ingredients

- 1 lb ground beef
- 1 small onion, diced
- 3 cloves garlic, minced
- 1 packet taco seasoning
- 1 tsp cumin
- 1 tsp smoked paprika
- 10 oz Rotel tomatoes
- 15 oz black beans, rinsed
- 1 cup corn
- 3 cups beef broth
- 1 cup heavy cream
- 8 oz cream cheese (softened)
- 1 cup shredded cheddar
Instructions
- Brown the ground beef in a large pot over medium heat, then drain excess fat.
- Add diced onion and cook until softened. Stir in garlic and cook 30 seconds.
- Mix in taco seasoning, cumin, and smoked paprika.
- Add Rotel tomatoes, black beans, and corn. Stir to combine.
- Pour in beef broth and simmer for 10–12 minutes.
- Reduce heat and melt in the cream cheese until fully combined.
- Stir in heavy cream and shredded cheddar until smooth and creamy.
- Season with salt and pepper, then serve warm with toppings.
Notes
- For a spicier version, add jalapeños or your favorite hot sauce.
