Description

A rich and creamy chocolate mousse made with dark chocolate, eggs, and heavy cream.


Ingredients

  • 6 ounces dark chocolate (at least 70% cacao)
  • 3 large eggs, separated
  • ¼ cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 pinch salt
  • 1 cup heavy cream

Instructions

  1. Melt the dark chocolate in a heatproof bowl over simmering water until smooth; fold in melted chocolate.
  2. Beat egg whites with a pinch of salt until stiff peaks form; gently fold into the chocolate mixture.
  3. Whip heavy cream to soft peaks and carefully combine with the chocolate mixture.
  4. Spoon into serving dishes; refrigerate for at least 2 hours to set.
