Instructions
- Preheat Oven: Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
- Mix Dry Ingredients: In a bowl, whisk together flour and baking soda.
- Prepare Wet Mixture: In a large bowl, beat the butter and sugars on medium speed until light and fluffy, about 2 minutes. Add salt, vanilla extract, and eggs. Mix until combined.
- Combine Ingredients: Gradually add the flour mixture to the wet ingredients. Beat until just combined. Stir in chocolate chips.
- Shape the Cookies: Scoop dough onto prepared baking sheets, about 2 tablespoons per cookie, spacing 2 inches apart.
- Bake: Bake until cookies are golden brown, 12 to 15 minutes. Cool on sheets for 2 minutes, then transfer to wire racks to cool completely.
- Prepare Filling: In a medium bowl, beat the softened butter until smooth. Gradually add powdered sugar, then heavy cream and vanilla extract. Beat until fluffy.
- Assemble Sandwiches: Pair cooled cookies by size. Spread filling on the flat side of one cookie and sandwich with another.
