This spooky Cherry Eyeball Cheesecake Slice is perfect for Halloween celebrations!

- 1 1/2 cups graham cracker crumbs
- 1/4 cup sugar
- 1/2 cup butter, melted
- 3 (8 ounce) packages cream cheese, softened
- 1 cup sugar
- 1 teaspoon vanilla extract
- 3 large eggs
- 1 can (21 ounces) cherry pie filling
- as needed Candy eyeballs
- as needed Red gel food coloring (optional, for extra effect)
- as needed Whipped cream (optional, for serving)
Instructions
- Prepare the Crust: Preheat your oven to 325°F (163°C). In a medium bowl, combine the graham cracker crumbs and 1/4 cup of sugar. Mix in the melted butter. Press the mixture into the bottom of a 9-inch springform pan. Bake for 10 minutes, then set aside to cool.
- Make the Cheesecake Filling: In a large mixing bowl, beat the cream cheese until smooth. Gradually add 1 cup of sugar and continue to beat until well combined. Mix in the vanilla extract. Add the eggs one at a time, beating well after each addition.
- Assemble and Bake: Pour the cheesecake filling over the cooled crust. Bake for 55 minutes or until the center is set but still slightly jiggly. Turn off the oven and allow the cheesecake to cool in the oven with the door slightly ajar for an hour to prevent cracking.
- Decorate: Once cooled, spread the cherry pie filling evenly over the top of the cheesecake. Place the candy eyeballs on top of the cherries to create the ‘eyeball’ effect. For a spookier look, add a few drops of red gel food coloring to mimic ‘blood’ around the eyes.
- Chill the Cheesecake: Refrigerate the cheesecake for at least 4 hours or overnight to set completely.
Notes
- Use a hot, damp knife to slice the cheesecake cleanly.
- For a creamier texture, make sure all the ingredients are at room temperature before mixing.
- Decorate just before serving to keep the eyeballs intact.
- You can experiment with different pie fillings for a variety of ‘eyeball’ colors.
