Description
A delicious and creamy chicken and broccoli casserole that’s easy to make with cooked rice and topped with cheese and optional French fried onions.

- 2 cups cooked rice (white or brown)
- 2 cups cooked chicken, diced (grilled or boiled)
- 2 cups fresh or frozen broccoli florets
- 1 can (10 oz) cream of chicken soup or cream of mushroom for a vegetarian option
- 1 cup shredded cheddar cheese
- 1/2 cup milk
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
- 1/2 cup French fried onions (optional for topping)
Instructions
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine the cooked rice, diced chicken, broccoli florets, cream of chicken soup, milk, garlic powder, salt, and pepper.
- Stir the mixture until all the ingredients are well combined and coated in the creamy sauce.
- Pour the mixture into a greased 9×13 inch baking dish, spreading it evenly.
- Sprinkle the shredded cheddar cheese generously over the top.
- Bake in the preheated oven for 25-30 minutes, or until the cheese is melted and bubbly.
- In the last 5 minutes of baking, sprinkle French fried onions on top for an added crunch.
- Remove from the oven and let cool for a few minutes before serving.
Notes
- For a vegetarian option, use cream of mushroom soup instead of cream of chicken soup.
- This dish can be prepared ahead of time and refrigerated before baking.
