A creamy and cheesy beef macaroni casserole that’s perfect for a family dinner.

- 1 pound ground beef
- 2 cups elbow macaroni
- 2 cups shredded cheddar cheese
- 1 can (14 oz) diced tomatoes
- 1 cup beef broth
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Preheat Oven: Preheat your oven to 350°F (175°C).
- Cook Macaroni: Cook the elbow macaroni according to package instructions. Drain and set aside.
- Brown the Beef: In a large skillet, heat olive oil over medium heat. Add chopped onion and garlic, sauté until translucent. Add ground beef, cooking until browned. Drain excess fat.
- Mix Ingredients: Stir in diced tomatoes, beef broth, and Italian seasoning. Let it simmer for about 5 minutes. Season with salt and pepper.
- Assemble Casserole: In a greased baking dish, layer half of the cooked macaroni. Top with half of the beef mixture, followed by a layer of shredded cheese. Repeat layers, ending with a generous topping of cheese.
- Bake: Cover with aluminum foil and bake in the preheated oven for 20 minutes. Remove foil and bake for another 10 minutes, or until cheese is bubbly and golden.
- Garnish: Allow to cool slightly before garnishing with chopped fresh parsley.
Notes
- For extra creaminess, mix a cup of ricotta cheese with the beef layer.
- Add a pinch of red pepper flakes for a spicier version.
- Substitute ground turkey or chicken for a lighter dish.
