Ingredients

  • 2 cups elbow macaroni
  • 2 cups shredded cheddar cheese
  • 1 can (14 oz) diced tomatoes
  • 1 cup beef broth
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C).
  2. Cook Macaroni: Cook the elbow macaroni according to package instructions. Drain and set aside.
  3. Brown the Beef: In a large skillet, heat olive oil over medium heat. Add chopped onion and garlic, sauté until translucent. Add ground beef, cooking until browned. Drain excess fat.
  4. Mix Ingredients: Stir in diced tomatoes, beef broth, and Italian seasoning. Let it simmer for about 5 minutes. Season with salt and pepper.
  5. Assemble Casserole: In a greased baking dish, layer half of the cooked macaroni. Top with half of the beef mixture, followed by a layer of shredded cheese. Repeat layers, ending with a generous topping of cheese.
  6. Bake: Cover with aluminum foil and bake in the preheated oven for 20 minutes. Remove foil and bake for another 10 minutes, or until cheese is bubbly and golden.
  7. Garnish: Allow to cool slightly before garnishing with chopped fresh parsley.
