Description
A delicious and easy chicken Caesar rice bowl that combines cooked rice, tender chicken, and fresh vegetables, topped with creamy Caesar dressing.
Ingredients

- 2 cups cooked rice
- 2 cooked chicken breasts, sliced or shredded
- 2 cups romaine lettuce, chopped
- ½ cup cherry tomatoes, halved (optional)
- ½ cup croutons
- ¼ cup shaved or grated parmesan cheese
- 1/3 cup Caesar dressing
- Fresh cracked black pepper, to taste
- Lemon wedges, for serving
Instructions
- First, if your rice is cold, give it a zap in the microwave for a minute or two until it’s warm-ish but not scalding.
- Add your cooked, sliced chicken on top of the rice. Or, honestly, just mix it all in if you can’t be bothered to keep things pretty.
- Scatter that chopped romaine over next, then the cherry tomatoes if you’re using them.
- Drizzle the Caesar dressing all over.
- Toss gently to coat—don’t worry if it looks a bit weird at this stage, it always does!
- Sprinkle over the parmesan and croutons. Give it a few cracks of black pepper.
- Add lemon wedges on the side for squeezing.
Notes
- Feel free to use leftover grilled chicken or any other preferred protein.
- This dish is customizable with different vegetables or dressings as per your taste!
- Don’t skip the cracked black pepper, it adds great flavor!
