Ingredients

  • 1 cup rolled oats (or gluten-free option)
  • 1 1/3 cup milk of choice (I used 2%)
  • 1/2 cup Vanilla Greek Yogurt (or plain Greek yogurt)
  • 1 cup blueberries (fresh or frozen)
  • 2 tablespoons chia seeds
  • 2 tablespoons honey (or maple syrup)
  • 1 teaspoon Vanilla Extract (if using plain yogurt)

Instructions

  1. In a blender, add the milk, yogurt, blueberries, honey, and vanilla. Blend until smooth.
  2. Transfer the blueberry mixture to a large mixing bowl.
  3. Add the oats and chia seeds over the blueberry mixture.
  4. Using a spatula, toss to combine the mixture.
  5. Cover the bowl and refrigerate for at least 4 hours or overnight.
  6. Divide into 2 jars, top with fresh blueberries, nuts, or granola, and enjoy.
