Description

A delicious and healthy breakfast option featuring creamy avocado on toasted sourdough topped with poached eggs and marinated tomatoes.


Ingredients

Scale
  • 2 Avocados (whole)
  • 2 slices Sourdough Bread
  • 1 Tablespoon Butter
  • 1 clove Garlic
  • 2 Eggs (poached, fried, or scrambled)
  • 4 Tablespoons Marinated Tomatoes
  • Microgreens (to garnish)
  • Salt and Pepper (to taste)

Instructions

  1. Slice avocados and add to the bowl. Mash avocados with a fork until smooth.
  2. Season with salt and pepper to taste.
  3. Toast the sourdough bread.
  4. While the bread is toasting, poach your eggs.
  5. When the toast is done, spread on butter and rub your sliced garlic up and down the toast for added flavor.
  6. Top toast with mashed avocado, poached egg, goat cheese, marinated tomatoes, and microgreens.
  7. Season with salt and pepper, and enjoy!
