- 2 Avocados (whole)
- 2 slices Sourdough Bread
- 1 Tablespoon Butter
- 1 clove Garlic
- 2 Eggs (poached, fried, or scrambled)
- 4 Tablespoons Marinated Tomatoes
- Microgreens (to garnish)
- Salt and Pepper (to taste)
Instructions
- Slice avocados and add to the bowl. Mash avocados with a fork until smooth.
- Season with salt and pepper to taste.
- Toast the sourdough bread.
- While the bread is toasting, poach your eggs.
- When the toast is done, spread on butter and rub your sliced garlic up and down the toast for added flavor.
- Top toast with mashed avocado, poached egg, goat cheese, marinated tomatoes, and microgreens.
- Season with salt and pepper, and enjoy!
