Description

This moist Apple Pecan Cake with cream cheese frosting is perfect for any occasion!


Ingredients

  • 1 1/2 cups granulated sugar
  • 3 large eggs
  • 1 cup vegetable oil
  • 1 teaspoon vanilla
  • 2 cups all purpose flour (spooned and leveled)
  • 2 teaspoons cinnamon
  • ½ teaspoon nutmeg
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 4 cups apples, I use Granny Smith (peeled and diced)
  • 1 cup chopped pecans (plus more for topping)
  • 1 (8 ounce pkg) cream cheese (softened)
  • 2 tablespoons butter (softened)
  • 2 cups powdered sugar

Instructions

  1. Preheat oven to 350 degrees. Spray a 9×13 pan with non-stick cooking spray.
  2. In a large bowl whisk together sugar, eggs, oil, and vanilla until combined.
  3. In a medium bowl whisk together flour, cinnamon, nutmeg, baking soda, and salt.
  4. Add the dry ingredients to the wet ingredients and mix until combined.
  5. Fold in the diced apples and pecans.
  6. Pour batter into prepared baking pan. Bake for 35-40 minutes or until a toothpick comes out clean.
  7. Let the cake cool.
  8. In a medium bowl, add softened cream cheese and butter. Using a hand mixer, beat until smooth. Add in powdered sugar and vanilla and beat until smooth.
  9. Spread frosting on cooled cake.

  • This cake stays moist for several days.
  • Feel free to add more chopped pecans on top for decoration.
